Hailing from Kerry, his roots run deep within the local community, making his commitment to his surroundings an integral part of our food. His enthusiasm for growing his own ingredients comes from his connection to the land and sea where he spends a lot of his time. His unwavering dedication to sharing his Irish heritage shines through in every dish, infusing our menus with authentic tastes and a genuine warmth that truly enriches the dining experience. When he’s not in the kitchen you can catch him in the waves feeding his passion for water sports or with his amazing wife Emily and four kids.
